Groceries this week: what we bought, made and spent

Grocery budget this month:

$1000 ($800 for regular grocery budget and $200 for meat)

I will tell you that usually my target budget for groceries is between $850-900. However, we are making a switch over to local, sustainable, “meet the farmer” kind of meat. So with that comes a bigger upfront cost. So this month we put aside an additional $200 to save for that.

What we spent this week:

I think I mentioned in my grocery post last week that Nick and I were supposed to be going on an overnight to Cambria for a little mini babymoon. 

I was super looking forward to this, and due to lots of little sick kiddos in our house (mostly just one though…), we were unable to go last minute. Since we couldn’t cancel, my sweet husband offered for me to go alone to have a night away.

Now I wish that I could sit here and write to you that I lept up into his arms with gratitude and joy…but I like to keep it real around here. I totally started crying. Blame it on pregnancy hormones, or the longest hell week ever…but I was super sad about it.

I wanted to go away with my husband. I really felt we needed that time.

After much going back and forth and feeling like as much as I could use a night away, I also didn’t want to go be totally alone in a hotel room (ps, usually I’d be all about this…), I decided to go.

Reluctantly…if I’m being honest.

The night turned out fine. I got there late and ended up taking a long shower and feeling much more relaxed about life, bahaha! In the morning I sat with a bunch of couples who were complete strangers to me at the inn’s breakfast. This shockingly was super fun, and the food was amazing. 

ALL of that for me to say this…because I was up north, I was excited to try a new grocery store on my way home, where I could shop just me, myself and I. Anyone else love to just wander slowly around crunchy, hippy grocery stores? I do!

So, I got to try a new store this week in San Luis Obispo, the SLO Food Coop. I had so much fun roaming through this store. They had so much in bulk…everything from the usuals, to honey and maple syrup (maple syrup in bulk is super hard to find!), to shampoo and conditioner!

And instead of going to a couple different stores, I was able to get most everything there…except a few things I forgot :-p

What we made:

  • Saturday: Clean up nachos– we had a tiny bit of chili left over from the week before, so I threw that on top of chips with some grated raw cheese and made a huge “clean-up” salad to go with it.
  • Sunday: Chicken soup with homemade einkorn bread
  • Monday: leftover chicken soup. Honestly, there almost seems like no point to eating it the first day. Chicken soup (or any soup for that matter) is 99.9% of the time a million times better after melding together for a day in the fridge. 
  • Tuesday: Black bean tacos. I like to make at least one vegetarian meal a week to save on money. I ended up making two this week! But tacos are usually a weekly staple in our house :-p
  • Wednesday: Slow cooker chicken and broccoli over rice. Oh my goodness, this meal was so flipping delicious. Had I known that we would all like it so much, I for sure would have doubled it…and will next time. Instead of using chicken breast, I used boneless chicken thighs. This costs less money, and also tends to be more tender because of the higher fat quantity in the chicken. I loved this dish!
  • Thursday: tri tip from Jean over a huge salad (we only make entree salads in our house… fun fact: most people think that our individual salads are the serving bowl. Yup, no exaggeration. 
  • Friday: out to dinner on my generous mother in law! We walked to the local mexican restaurant and watched our children melt down a good portion of the night…mostly my sweet Ayla. Totally relaxing.. 🙂
  • Saturday: quiche and salad. I had a little whoops with this one. Instead of putting 1 teaspoon of salt in the egg batter, I put a tablespoon. Oh you know, only like 3x’s the amount… In case this ever happens to you, you’re supposed to add acid to neutralize it. So I added a splash of white vinegar, added a few more eggs, and some heavy cream, and all was good. 

Breakfasts are usually: homemade yogurt (I started making my own using the live cultures from the yogurt I bought last week) and granola, eggs on homemade einkorn toast, or a scramble of some kind.

Lunches are usually: a huge salad with some protein on top, or as simple as hard boiled eggs with avocado and sliced apples. I seem to like to keep lunches more and more simple the more pregnant I become.

Snacks are usually: raw cheese and fruit, or fruit and nuts
