There will be nights that you feel you were thrown under the bus and the last thing on the planet you want to do is cook dinner. Rather than run through the drive through or waste your hard earned money on take out…again…here is a recipe for Instant Pot lentil soup and ployes that your kids will love!

As my husband closed the door to leave for work, my 3 week old baby was screaming in my arms, and my 23 month old, arms wrapped around my leg was screaming from the floor. Meanwhile, my 5 year old jumped around asking me if he could watch a show (or eat a snack, or whatever he was asking me in that stressful ass moment).

The only thing I could think to do was call my mom…I freaking needed my mom.

I sat down on the couch, with my baby screaming in my arms to be fed (again…since 20 minutes ago) and my oldest two following me with requests and protests.

“We’re calling Memere”.

As soon as my mom picked up the Facetime call, I immediately wanted to melt into a puddle of tears.

“Mom, this is too hard.”

Thank you mom for not laughing at me, or judging me, or telling me I should be questioning my life choices (ha!). You sat with me, held space for me, and let me feel my fear.

Today I decided it was not the day to judge myself for letting my kids watch too much TV or eat too many snacks.

Today I let all rules and expectations on my parenting just go ahead and sit on a shelf. Today I needed to just be (and fold way too much laundry…I mean, people need underwear, for the love of God).

On days like this I have no interest or tolerance to even make dinner. My toddler self takes over and I want to just sit cross legged in the middle of the floor and cry.

These are the nights I long to call up the Pizza Shack and get take out.

However, since I am on a spending freeze this month, and we made a very lofty, audacious goal to get our debt under $100,000 this year… no take-out for us.

Enter the ultimate fast food.

The soup I made was so easy, so delicious…and it directly spoke to my son’s heart because that kid loves himself some lentil soup. So mama was more than happy to make him homemade lentil soup (we had all the ingredients in our pantry!).

(This Instant Pot Lentil Soup and ployes recipe is super speedy, but the fastest option is to have soup that was batch cooked and then frozen. There are a few delicious soup options in my freezer meal post. The white bean, potato, sausage soup is my absolute favorite).

Thanks to all the hormones and the hard day, I was craving bread in a big way. But we don’t typically eat gluten, so we don’t always have bread in our house.

Boo.

These pillowy little buckwheat dreams are so fast to make, and my 5-year-old literally said, “I just lost my mind with how good this is!”

Yeah…he takes after his mama with his big feelings and slight exaggerations.
